Raisin Oatcakes



1 1/2 cups Flour
1 cup Quick Cooking Rolled Oats
1/4 cup sugar
1 tbsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 cup hard margarine or butter


large egg, fork-beaten
2/3 cup milk
1/2 cup raisins


Mix first 6 ingredients together ( I never use salt tho) and cut in the butter. (Guess who got to use her pastry blender for the first time?) Cut in butter until mixture is crumbly. Make a well in the center.

Add remaining 3 ingredients, mix till it forms a soft ball. Turn onto lightly floured surface, knead 8 times. Roll/pat to 1/2 inch thickness, use a round 2 inch cutter to cut out approx. 24 cakes. (I used a small wineglass, I have no biscuit cutters...hmmm...add to list) Arrange on greased(unless you have the nonstick like me) pans, bake at 400 until browned (8-12 minutes). Let stand for 5 minutes, then cool on rack.

They are basically oatmeal biscuits from Company's Coming, original recipe doesn't have cinnamon but it just feels more desserty with it. MMM really good warm with a pat of butter on top....the kids LOVED them, of course.
